Green Matcha Tea Pistachios Bars

These protein bars remind me of spring, with their vivid green colour (from the matcha). Super healthy and only using the natural sweetness of honey, these no-bake bars are simple to make yet taste phenomenal.

All you need is a food processor (as in many of my recipes). Matcha bars are full of antioxidants, and will give you the power you need to complete your tasks.

Yield: 10 bars; Prep time - 10 minutes; Cooking time - 5 minutes; Chilling time - 30 minutes.

Total time: 45 minutes.

Protein – about 15g

Carbs – about 9g

Fat – about 5g

Ingredients

  • 1/3 cup roasted peanut butter

  • 1/2 cup dry figs

  • 1/2 cup blanched almonds

  • 1/2 cup pistachios

  • 1/2 cup unsweetened soy milk

  • 3 Tbsp honey

  • ½ Tbsp stevia

  • 3 scoops vanilla protein powder

  • â…“ cup gluten-free flour

  • 1 Tbsp green tea matcha powder

  • ½ cup white chocolate chips crushed (optional)

Directions

  1. Line a baking pan with parchment paper. Set aside.

  2. In a food processor mix all the ingredients - peanut butter, figs, pistachios, almonds, soy milk, honey, stevia, vanilla protein, flour and matcha - to the even consistency of cream. Crush chocolate chips and add to the mixture( optional).

  3. Dump the mixture into the pan, spread it out evenly and press firmly down.

  4. Freeze for at least 30 minutes, then slice the mixture into 10 bars.

  5. Store bars in the fridge or freezer.
